Procedure for the preparation of
Kombucha
Good health is more than chance, its a choice.

There are a lot of different disscussion pertaining to how to go about making and fermenting the kombucha tea but this is how I have been doing it for a very long time and with no problems what so ever. There are many different directions at other websites but mine dosent differ that much from them except mine are just in plain ole english, no sugar coating.

I have a large stainless pot that I measure 3 quarts + 1 cup of water into and boil for five minutes. As soon as the water comes to a boil I add 1 cup of sugar. The reason I boil the water for 5 minutes is to get rid of the chlorine. Many people say dont use straight tap water but I have had no problem at all due to the length of the boil.

Once the mixture has boiled I pour the water into the awaiting 1 gallon jugs with the tea bags. I use 8 or 9 tea bags, black or green. If I have the green on hand thats what I use because I prefer it over black. I have experimented with a lot of different types but have settled for just plain old kroger brand.

Make sure that the tea mixture cools to room temp. before adding the mushroom and starter. I add 1/2 cup of starter to the jug and stir before adding the culture and then after putting the culture in I add another 1/2 cup of starter. Once all of this is mixed cover the top of jug with a paper towel secured with a couple of rubber bands. Set the jug in a place away from sun light and wait for 1 week. I find the action taking place inside the jug during the fermentation fascinating.

Once the week is up I remove the culture and pour the finished tea into 2 liter plastic coke bottles and cap with the screw on caps. These bottles are ideal for this. Not only are they very strong but they are also airtight. I have found by experimenting over time that I can complete the whole proceedure and never have to touch the culture with my bare hands by using a couple of wooden chopsticks to transfer the culture from the jug to an awaiting glass bowl until time comes to put it back into the new mix.

Dont be afraid to experiment with this new health giving hobby. I have found this really great healthy recipe below for mixing the finished tea. It really taste terrific.

HOULIHAN'S HOULI FRUIT FIZZ

Restaurateurs Joseph Gilbert and John Robinson needed a name for the new restaurant they planned to open in the Country Club Plaza of Kansas City, Missouri. To make the job easy, they kept the name of the location's previous tenant -- a clothing store called Houlihan's Men's Wear -- and opened Houlihan's Old Place in 1972.
This was at the time when T.G.I. Friday's was popularizing casual dining, so the concept was an instant hit. That early success led to more Houlihan's opening in other states, and another multi-million dollar chain was born. The Houli Fruit Fizz is a simple blend of fruit juices and Sprite that can be served with a meal or enjoyed on its own. This drink is one of Houlihan's own classic, signature recipes.

1 12-ounce can cold Sprite
1/2 cup cold pineapple juice
1/4 cup cold orange juice
1 cup cold cranberry juice

1. Combine all of the ingredients in a pitcher and pour into two glasses over ice.
Be sure all of the ingredients are cold when combined.

If it worked for the Houlihan's then its gotta work for the Moran's and it did, only I think mine taste better.

MORAN'S KOMBUCHA MOCK HOULI FIZZ

The first thing I feel that I need to explain is when I bottle my Kombucha brew, I let it age in a sealed container at room temperature for at least a week to let the carbonation build up to a great bubbly, which it does nicely. Next I mix the ingredients together that equals a little more than 3 quarts.
It stores nicely in a sealed container in the refrigerator but I dont have that problem because I'm constantly making more because it goes fast.

64 ounces of cold kombucha
4 cups cold cranberry juice
2 cups cold pineapple juice
1 cup cold orange juice

Raspberry juice taste just as good if not better than the cranberry.

Combine all of the ingredients in a pitcher and serve with or without ice. Be sure all the ingredients are cold when combined if you are going to drink it right away.

Now I've got it made if I can just turn this into a multi-million dollar chain. If not I guess I'll just have to settle for the great taste.

Note: My final recomendation is to use a cranberry/apple juice mixture. By using the tea instead of the sodapop you are adding healthy enzymes. The recipe when combined with the taste of the kombucha tea is absolutly delicious. (AND MUCH HEALTHIER)
