Sweet Pie 

Ingredients

Crust: Filling:
3 Cups  Flour -- Use more, if necessary 2 1/2  pounds  Ricotta cheese
1/4 cup  sugar 1/2 teaspoon  salt
1 stick  margarine 1 1/2 cups  sugar
1 stick  butter 10 whole  eggs
1/4  cup  milk 2  teaspoons  vanilla
1/4 cup  rum 1  whole  lemon rind
1 teaspoon  salt  
1  teaspoon  baking powder  
2  whole  eggs  
2  teaspoons  vanilla  

Crust - Prepare two 8-inch pans for crust by sprinkling dry farina cereal, corn meal or grits on the bottom of each pan. 

Prepare crust:  Cut flour and dry ingredients with butter and margarine. Add liquid ingredients.  Knead dough slightly.   Cut dough into 4 parts.  Roll out 2 parts for bottom crust.  Set aside remaining 2 parts. 

For filling, beat together remaining ingredients, beginning with Ricotta Cheese until smooth.   Pour into pastry lined pans, equal amounts of filling. 

Roll out each remaining parts of the dough and cut into 1/2 inch strips or use lattice cutter.   Lattice dough strips on top of each filling. 

Preheat oven to 350 degrees.  Bake 55 to 60 minutes - until golden brown on top and filling is firm.
