Cuddruri

6 cups of flour, as needed
1 small potato - boiled and save the water
1 package dry yeast
 
Boil potato until soft, cool.  Dissolve yeast in 110 degree water -  about 1 cup of water.  Make a well in flour and work in yeast water.  Add the potato that has been mashed to blend well with flour mixture.  Add the potato water as needed. 
 
Knead.  The dough should be somewhat sticky.  Add a little oil to the sides of the bowl and top of dough before setting aside to rise.  Punch down after about an hour and let rise another hour. 
 
Pick dough up and push a hole through the middle and fry in hot oil.
 
Roll in sugar and eat hot and crispy.
 
My family in Marano Principato make these and they can't keep enough around.  Also stuff with anchovies for those who enjoy them a little saltier.
