Quartus Knight arrived in the Waterloo, New York about 1815, he was one of the first settlers to the area.
In 1816 he was one of the first public school trustees.
On July 18th, 1818 the Masonic Lodge started holding there meetings at the Waterloo Coffee House owned by Quartus Knight.
Quartus Knight built the first hotel in central Waterloo, it opened in January of  1819, called the Waterloo Coffee House, but the name was changed to the Eagle Hotel and Eagle Tavern. On November 16, 1826, Quartus Knight and wife Nancy sold the hotel for the sum of $3700. It appears that Mr. Knight's health was the reason for selling his interest in the hotel.
The Waterloo Coffee House was the site of many civic and government meetings.

Particular words were used to refer to relationships between a man and a woman at the time. The 1876 History of Seneca Co., New York reports that “Content Standish was content to keep company with Horace Shekel; that Joshua Merrill went to see Sophia Curtiss; that David J. Baker paid attention to Sarah Fairchild; and that everybody said that Caleb Fairchild was going to have Aurelia Maltby….”
Weddings were free from formality and stiffness. Simplicity and hilarity were the rules. On the occasion of the marriage of Job White, at the residence of Mrs. Quartus Knight, provision was made, not alone for invited guests, but for the neighbors in general. Most marriages were solemnized according to law by the Esquire. The parson did not object, since, while the former got most weddings, the latter got most fees.

Ninety-third Birthday
The following from the Seneca County News will be read with interest by the friends of the parties interested: “On the 15th inst. An occasion occurred in this village as pleasant as it was rare. It was a family gathering, induced by warm affection, and intended to do honor to a mother whose life on that day, had reached ninety-three years. This favored mother is Mrs. Nancy W. Knight, and the place of the family meeting was the residence of Mrs. James K. Richardson, her daughter on Virginia street. Three of her four living sons - namely Samuel P. Knight and Horace L. Knight of Auburn, and Lemuel P. Knight of Detroit were present, together with Mrs. Samuel P. Knight, Mrs. Susan Porter, Horace A. Knight a grandson with his wife from Auburn. These with grandchildren and great grandchildren residing in Waterloo composed the birthday party. It need not be said that the lady in her tenth decade was the center of attraction, and that she received the family congratulations with dignity and grace. It was manifestly to her an occasion of great satisfaction. The faces of her children caused her face to shine with gladness, and no expression of their regard could surpass the manifestation of her own undying maternal love. Mrs. Knight in among the very few surviving pioneers of Waterloo. Her long life is both a wonder and a joy to her neighbors and friends. She is represented by the fourth generation. She links the ancient with the modern, and her sixty-five years in Waterloo is the measure of its history. If God will, may other birthdays follow that of which we have written, and her long life be succeeded by a far longer one in heaven.

Soon after, Capt. Joseph Clapp built a fulling mill on Broad Brook, a short distance below the button and suspender factories, where he not only fulled cloth, but colored and dressed it, for which he charged twenty-five cents per yard. There were but few mills of this description in this region, and hence he carried on quite a flourishing business. In the year 1792, or 1793, Thaddeus Clapp, son of Joseph, went to Worthington, and engaged in this business, but in consequence of a failure of his supply of water, he soon returned and entered into co-partnership with his father. This relation existed until the death of the latter in 1797, when the works were removed to Manhan river near the grist-mill. After the business was given up by Mr. Clapp it was conducted successively by Roswell Knight , by Lowell E. and Jason Janes, then by Janes & Alvord, and lastly by Janes & Ferry.
