Mexican~style Scrambled Eggs

6 flour tortillas
8 eggs
1/4 cup water
2 tablespoons chopped canned green chiles
2 tablespoons taco sauce
1/4 teaspoon salt
Dash of pepper
Vegetable cooking spray
3/4 cup taco sauce, divided
1/2 cup plus 1 tablespoon shredded Cheddar cheese, divided

Wrap tortillas in foil, and bake at 350 degrees for 7 minutes. Set tortillas aside and keep warm. Combine next 6 ingredients in a large bowl; mix well with a wire whisk. Pour egg mixture into a large skillet coated with cooking spray; cook over medium heat, stirring often, until eggs are firm but still moist. Spoon one-sixth of egg mixture onto each tortilla. Top with 1 tablespoon taco sauce and 1 tablespoon cheese; fold opposite sides over. Garnish each tortilla with 1 tablespoon taco sauce and 1/2 tablespoon cheese. Makes 6 servings.
