German Cornmeal Sausage Muffins 1 cup CORNMEAL 1 cup unbleached FLOUR 4 tsp. BAKING POWDER 1/2 tsp. SALT 1/4 tsp. PEPPER 1 Tbsp. SUGAR 1 1/4 cups MILK 1 EGG 1/3 cup SAFFLOWER OIL 1 GERMAN SAUSAGE, cooked and sliced thick Blend well the first six ingredients in a large bowl. Then whisk the next three ingredients in a small bowl. Combine quickly. Spoon enough batter into greased muffin pans to fill half full. Then place a slice of the cooked sausage in center and cover with more batter. Bake on middle rack in preheated oven. Bake at 425 degrees 18 minutes. Makes 15 muffins. |
