French Dijon Ham Muffins 1 2/3 cups all-purpose FLOUR 1/3 cup CORNMEAL 1/4 cup SUGAR 2 tsp. dry MUSTARD 2 tsp. BAKING POWDER 2/3 tsp. SALT 1/2 tsp. SODA 1/8 tsp. CLOVES 1 cup finely-chopped smoked HAM 2 EGGS, room temperature 1 cup BUTTERMILK 1/3 cup VEGETABLE OIL 3 Tbsp. DIJON MUSTARD Mix together dry ingredients (first eight). Stir in ham. In another bowl, beat together eggs with buttermilk, oil and Dijon mustard. Pour into a well in center of dry ingredients, mixing quickly. Spoon into muffin cups to three-fourths full and bake until brown. Serve warm. Bake at 375 degrees 20-25 minutes. Makes 12-14 muffins. |
