Creole Breakfast Muffins

1 1/2 cups flour
1/4 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 cup cooked white rice, cooled
1 egg
2 tbsp. butter, melted
1 1/8 cup buttermilk
confectioner's sugar

Mix flour, sugar, baking powder, salt, and spices. Stir in rice. whisk egg, butter, and buttermilk, then quickly add to dry ingredients. Spoon into greased muffin cups and bake until done. Bake at 400 degrees for 15 to 20 minutes. Remove from muffin tins while still warm. Sprinkle the tops with confectioner's sugar. Makes 12 muffins.
