Apple Fritters

1 1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 cups peeled, finely chopped apples
2/3 cup milk
2 eggs, beaten
1 tablespoon vegetable oil
Vegetable oil
Powdered sugar

Combine flour, sugar, baking powder, and salt in a large bowl, stirring well. Add apples, milk, eggs, and 1 tablespoon oil; stir mixture just until moist. Carefully drop batter by rounded tablespoonfuls into deep, hot oil (about 370 degrees); cook only a few at a time, turning once. Fry 2 to 3 minutes or until fritters are golden brown. Drain well on paper towels. Sift powdered sugar over fritters. Makes 3 dozen.
