Swedish Christmas Muffins 2 cups unbleached FLOUR 1/2 cup WHEAT GERM 1 tsp. ground CARDAMOM 1 tsp. SALT 1/2 cup SUGAR 4 tsp. BAKING POWDER 1 tsp. SODA 1/2 cup chopped ALMONDS 1/2 cup RAISINS 1 cup glazed MIXED FRUIT 2 EGGS 1 cup BUTTERMILK 1/2 cup melted BUTTER Combine the first ten ingredients in a large mixing bowl. Whisk eggs, buttermilk and melted butter. Add to dry ingredients, stirring quickly. Spoon into muffin tins and bake in preheated oven until done. Bake at 375 for 20 to 22 minutes. Makes 18 muffins. |
