Jamaican Banana Pecan Muffins

1 1/2 cups all-purpose FLOUR
2 tsp. BAKING POWDER
1/2 tsp. SODA
1/2 tsp. SALT
1/2 cup SUGAR
1/4 tsp. grated NUTMEG
1 cup unprocessed BRAN
1 cup chopped PECANS
1 1/2 cups mashed BANANAS
2 Tbsp. WATER
1 tsp. VANILLA
1 beaten EGG
1/4 cup BUTTER, melted
3/4 Cup RAISINS (optional)

Mix flour, baking powder, soda, salt, sugar, nutmeg and bran. Stir well. Add pecans. In a small bowl, mix the mashed bananas, water, vanilla, egg and melted butter. Stir well with whisk. Combine quickly with the dry ingredients. Fill greased muffin cups three-fourths full and bake until tester comes out clean. Bake at 375 degrees 20 to 25 minutes. Makes 18 muffins.
