Honey Nut Bran Muffins 1 cup HONEY 1/2 cup WATER 1/2 cup WALNUTS 1 cup whole wheat FLOUR 1 cup BRAN 1 cup BRAN CEREAL 1 tsp. SODA 3 tsp. BAKING POWDER 1 tsp. SALT 2 EGGS 1 cup SOUR CREAM 1 cup RAISINS Grease muffin tins or use lecithin spray. Mix honey and one-half cup water in a pan and warm on the stove until blended. Spoon one tablespoon walnuts into each of 18 muffin cups. Then cover nuts with one tablespoon honey/water mixture. Combine flour, bran, cereal, soda, baking powder and salt in mixing bowl. Whisk eggs with sour cream in another bowl. Add raisins. Also add any remaining honey/water mixture to the wet ingredients. Combine with dry ingredients and stir quickly. Spoon into muffin cups and bake until golden. Bake at 375 degrees 25 minutes. Makes 18 muffins. |
