Hawaiian Banana Nut Muffins

2 1/2 cups FLOUR
3/4 cup SUGAR
1 1/4 tsp. BAKING POWDER
1 1/4 tsp. SODA
1 tsp. SALT
3 EGGS
2/3 cup BUTTER or margarine, melted
2/3 cup BUTTERMILK or yogurt
1 1/4 cups mashed BANANAS (3 medium)
2/3 cup chopped MACADAMIA NUTS or walnuts

Sift together the flour, sugar, baking powder, soda and salt in a large bowl. In a smaller bowl, beat eggs and blend together with margarine and buttermilk. Add mashed bananas to this mixture. Make a well in the dry ingredients and add the banana-egg-milk mixture, mixing lightly. Fold in the chopped nuts. Spoon into greased muffin cups and bake until golden brown. Bake at 350 degrees 20 to 25 minutes. Makes 24 muffins.
