Greek Baklava Muffins

Filling:
1 cup chopped walnuts
1/3 sup sugar
2 tbsp. brown sugar
1 1/2 tsp. cinnamon
3 tbsp. butter, melted

Mix and set aside.

1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup sugar
1 egg
3 tbsp. butter, melted
1 cup buttermilk

Combine flour, baking powder, baking soda, and sugar. In another bowl, whisk egg, butter, and buttermilk. Add to the dry ingredients until mixed. Fill lined muffin cups 1/3 full with batter. Add 1 tbsp. filling, then cover with batter until 2/3 full. Sprinkle remaining filling on top. Bake at 400 degrees for 15 to 20 minutes or until golden brown. Remove from the oven and drizzle with honey.
