Meema's Pumpkin Cookies 1 cup butter, room temperature 1 cup sugar 1 cup pumpkin 1 egg 1 tsp. vanilla 2 cups flour 1/2 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 cup dates, chopped 1/2 cup nuts, chopped Brown Sugar frosting Preheat oven to 375 degrees. Sift together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, beat butter until creamy. Add sugar, pumpkin, egg, and vanilla; mix until smooth. Add flour mixture. Stir in by hand the dates and nuts. Drop from a teaspoon on a greased cookie sheet. Bake at 375 degrees for 10 to 15 minutes. When cool, frost the cookies with Brown Sugar frosting. Brown Sugar frosting Cook 1/2 cup brown sugar, 1/4 cup and 3 tbsp. milk for 2 minutes. Stir in 3/4 tsp. vanilla and 1 cup of powdered sugar. |
