Brown Sugar Pound Cake

1 1/2 cups shortening
1 16 ounce package light brown sugar
1/2 cup granulated sugar
5 eggs, separated
3 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 cup pecans, chopped
1 tsp. vanilla

Preheat oven to 325 degrees. Grease and flour a 10-inch bundt pan. Cream shortening and sugars. Add egg yolks, one at a time. Beat well after each addition. Beat until light and fluffy. Combine flour, baking powder, and salt. Add to creamed mixture, alternating with milk and beginning and ending with flour. Stir in pecans and vanilla by hand. In a small mixing bowl, beat egg whites until soft peaks form. Gently fold into the batter. Pour into the bundt pan. Bake for 1 hour and 30 minutes or until a cake tester inserted into the cake's middle comes out clean.
