Lardy Cake

Have you ever heard of 'Lardy cake' ? 

I think that must be a Hampshire dish as no one has heard of it here in the Midlands. 

It was scrumptious.

I'm getting carried away with the  memory of this, I wonder if they still make them in Hampshire?

Ingredients

1 lump of Bread dough  Sugar 
Lard

Method

.

Take a lump of bread dough, roll it out to ¼ inch thickness. 

Spread with lard and sprinkle with sugar, then fold into layers as if you were making puff pastry.  

Fold and roll till you have about six layers. 

Place in a greased baking tray and allow to rise as with bread. 

Bake in a hot oven for 45 mins and glaze the top with a sugar wash.

Turn out onto a plate while still hot or it will stick to the tray as the bottom is a treacly base which sets like toffee when cold.
