Biography:
SARAH MARGARET (DUNHAM-CREAGER) SHIELDS


SARAH MARGARET CREAGER, eldest daughter and eldest child of Gideon Winfield Creager and Mary Jane Dunham, was born at the family home on 13 December 1883 at Darke County, Ohio. On 18 February 1904, she was married to Raymond Dale Shields. Raymond was a share-cropper farmer. For a time Sarah and Raymond lived in Darke County, Ohio and removed to Miami County, Ohio in 1922-1923. Once there the family eventually removed to Washington Township, Miami County, Ohio, where they resided in various farm homes. In later years, they moved to a small home in Piqua, Miami County, Ohio. Both my grandparents were short people...not taller than 5 foot. She died 12 January 1961 at Piqua, Miami County, Ohio and was buried at Abbottsville Cemetery, Abbottsville, Van Buren Township, Darke County, Ohio next to Raymond.

SARAH's CORN MEAL MUSH

Mix 1 cup of corn meal with 1 cup of cold milk.
Bring 2 cups water and 1 cup milk to a boil.
Add 1 tsp. salt and corn meal mixture, stirring constantly.
Cover, cook over low heat 10 min. or longer til thickened.
Pour into loaf pan, cool, and refrigerate.
When cold, cut into 1/2 in. slices and fry on lightly greased skillet.

SARAH's MINCE MEAT

3 1/4 lbs. ground beef
1/4 lb. suet
11 lbs. apples
4 boxes of raisins
2 qts. cherries
2 heaping tbsp. cinnamon
2 tsps. cloves
2 tsps. nutmeg
2 tsps. salt
1 tsp. pepper
3 lbs. brown sugar
1/2 gallon cider vinegar or 1 quart white vinegar diluted

Cook meat while preparing other ingredients.
Then cook all until thick as desired.
Makes 21 pints.

SARAH's SUNNY SPONGE CAKE

1 3/4 cups flour
2 tsp. baking powder
a little salt
Sift together above ingredients 5 times

Beat together:
1 2/3 cups sugar
4 egg yolks (separate out egg whites)
2 tbsp. cold water

Then blend all together with 2/3 cups hot water.
Then beat 4 egg whites with 1/4 tsp. cream tartar until stiff.
Fold egg whites into batter.
Pour into ungreased angel food cake pan.
Bake 325o for 1 hour.

1 package lemon Jello
2 cups cooked rice (3/4 cup before cooking)
1/2 pt. whipped cream
1 cup sugar
1 small can crushed pineapple
