Chopped Apple Cake —
Amount:
Ingredients:
1.

sliced apples
eggs

Big Chief Sugar (brown sugar)
flour
soda
cinnamon
baking powder
salt

oil
vanilla
chopped nuts
Directions:
1.  Put sliced apples in a large bowl, break eggs over them and stir with
         a fork.
2.  Blend together and Sift over apple mixture. Stir well.
3.  Set aside in "icebox" for about an hour. Remove from "icebox" and
         re-mix (by this time all of the brown sugar will have disolved - you
         don't want any "grit" from undesolved sugar).
4.  Then add these ingredients.
5.  Finally - Stir well and bake in "8 x 12" pan at 325 degrees for 1 hour.
         This makes a nice moist cake and does not have to be frosted.
Explanation:
          This recipe was in my wife's, mother's recipe box when she died at age 92. Joan's (my wife) Grandparents were a butcher and baker in Cincinnati (circa 1920 - 1930) and Joan's Mother was an outstanding cook!
