            Oatmeal Cookies

            Ingredients:
            1/2 cup raisins
            1/2 cup nuts, either walnut or pecans
            1/4 cup rum if using walnuts, brandy if using pecans
            ( the small glasses of brandy or rum like you get on airplanes is ideal for this, you can also buy these at any class 7 store) 1 stick butter, not margarine
            1/2 cup brown sugar
            3/4 cup white granulated sugar
            1 tsp vanilla
            1 egg
            1 small orange (grate peel and set aside)
            squeeze orange juice out of orange and set aside
            3/4 cup flour
            1 tsp baking powder
            1/2 tsp salt
            1/1/2 cup quick oats

            Directions:
            preheat oven to 175 degrees.
            Place raisins, nuts and either rum or brandy in bowl and let sit for 15-20 min.
            In large mixing bowl, cream sugars and softened butter together.
            add 1 egg, vanilla, orange peel and 1 tsp of orange juice.
            beat together well.
            add flour, baking powder, and salt and mix well.
            add oats and blend, mixture will be very thick
            add orange juice if needed, depending if you want thinner cookies.
            Use tablespoon and spoon out a spoonful and roll into ball and flatten
            to make a small patty like cookie. Can make lareger or smaller.
            You also can spoon drop the batter if you make it thinner with orange juice.
            place cookies on buttered cookie pan and bake 11-12 minutes
            at 375 degrees.
            This recipe can be made without the rum or brandy and adding
            cinnamon and spices for flavor and 1 tbsp more orange juice..
            Can double this recipe easily to make more.
            this recipe usually makes about 18 -20 cookies




            Meat Loaf


            loaf pan
            2 slices of plain white bread or wheat bread
            1 lb ground beef at least 85 % lean
            1/2 lb ground pork
            1/2 cup finely chopped small sweet pepper
            1/2 finely chopped onion
            1 egg
            1 tsp salt
            1/2 tsp pepper
            1 cup quick oats
            2 tbsp ketchup
            1/2 tsp worchestershire sauce
            1/2 tsp any steak seasoning (spice or liquid). 1 slice bacon

            Directions
            preheat oven to 350
            spray pan with pam if desired
            place two slices of bread to fit in bottom of loaf pan and set aside.
            In a large bowl, place ground beef and pork together and blend well.
            add all other ingredients and blend together well to form a well mixed loaf.
            place loaf on top of bread in loaf pan.
            place a piece of bacon cut into three strips on top of the meatloaf.
            place aluminum foil (sprayed with pam, optional) tightly over the meatloaf pan.
            Place in oven and bake for 1 1/2 hours or until done.
            Can double recipe if you use a larger loaf pan.
            When done let cool slightly to cut easily.
            Throw away fat absorbed loaf bread on bottom
            Meat loaf can be served with a brown gravy made with a gravy mix or a tomato sauce

            Macroni and cheese or boiled potatoes are good side dishes for this Meatloaf.
            Green Beans as the vegetable and Apple Sauce or cooked apples also go well with it.
            Tomata Sauce:
            1 small can tomato sauce
            2 tbsp worchestershire sauce 1/2 tsp pepper

            Mix together well



            Onion Soup


            This is a mild onion soup if you want more onions in your soup just add another to the list

            serves two but can be doubled

            Ingredients:
            1 tbsp canola oil
            1 beef shank with bone in and some meat on
            1 sweet type onion, yellow texas sweet or vidalia
            (finely sliced
            1 small red onion (spanish sweet)
            (finely sliced)
            3 tbsp butter not margarine
            1 tsp salt,
            1/2 tsp Pepper
            1/2 tsp dried tyme
            1/2 tsp dried parsley
            2 slices swiss cheese
            2 thick slices french bread, toasted
            (or large plain croutons or buttered cornbread croutons, these can be bought)
            2 broth cubes or packet from a pack of beef romain noodles
              Tip here:
            many times you want a packet of broth for stew, soup, rice or other times. the packets of romain noodles are only about 15 cents each and you dont have to use the noodles just discard and use the packet of either beef, or chicken flavor broth packet that are included. makes and inexpensive way to flavor may items.
            Using a packet of the chicken flavor spice in chicken and dumplin water is a great way to add extra flavor

            Directions:
            Heat pot on stove for a couple of minutes, add canola oil, then brown beef with bone in on both sides. Add 3 cups water, tyme, parsley, salt, pepper, broth cubes or packet, and boil, covered, until meat is very tender. Add water as needed to keep at least 3 cups and thens ome at all times. take meat out when very tender, fall off the bone tender. let cool, reserving broth.
            chip meat off of the bone into small fine pieces. and reserve 1/2 cup of the finely chopped pieces. You will only need about 1/2 cup of meat to use in soup. other meat can be made into a sandwich or if you are doubling the recipe you may need it.

            Using another pot on the stove. Warm pot up and add butter and melt slowly and add onions.
            Turn down the heat and place lid on pot and let onions simmer for 10 minutes or until browned some.
            add 1/4 cup of the broth and place lid back on and simmer for another 10 minutes.
            add 1/4 cup of the broth and place lid back on and simmer until onions are very very soft and brown. adding broth if needed but remember you will need at least two cups of broth left.
            When onions are very tender place them in the pot of broth and bring back to the boil
            Add the reserved 1/2 cup of beef
            Check for saltiness if not enough add more salt here
            When this comes to a boil, take off the heat and place in two soup bowls
            Soup is not thick and should not be thickened.
            place either a good handful of croutons or 1 thick slice of toasted french bread on top
            add slice of swiss cheese on top of croutons or bread.
            place bowls under broiler and broil for 10 minutes or until cheese has melted.
            serve instantly.
            If you like onions, This is a great soup

            Usually there is more meat on the bone than you will need in the soup for two people because its an onion soup and only need a small amount of beef for flavor.
            Barbecue sauce can be added to the left over meat to make a barbecue sandwich



            Crock Pot Ham


            Ingredients:
            A boneless ham that will fit in your crockpot
            Precooked boneless ham
            aluminum foil
            1 can of pineapple slices
            1/4 cup brown sugar
            1 tbsp mustard
            2 cloves

            Directions
            Put 1/2 cup of water in Crockpot.
            A crock pot will crack without liquid in it

            Mix brown sugar with liquid from pineapple slices and add, cloves and 1 tbsp mustard, mix well.
            Place Ham in aluminum foil and cover well, with sugar mixture then wrap up good in foil.
            Place in crockpot with water
            cook 1 hour on high
            6-7 hours on low until ham is thoroughly hot,
            Open the aluminum foil and place pineapple slices on top
            re-wrap and put back in crockpot and cook another 20 minutes.)



            Sweet Potato Pie


            Ingredients:
            2 cups sweet potatoes, drained
            4 tablespoons butter, melted
            3 eggs
            1 cup sugar
            1 teaspoon cinnamon
            1/4 teaspoon grated nutmeg
            3/4 cup milk
            1 teaspoon vanilla extract
            1 frozen 9" pie shell, unbaked
            1/4 cup chopped pecans


            Directions:
            Preheat oven to 375 degrees
            Use potato masher or mixer to mash sweet potatoes with melted margarine. beat in eggs, sugar, cinnamon and nutmeg. Add milk and vanilla.
            Sprinkle pecans over surface.
            Pour into unbaked pie shell
            Bake for 35 to 45 minutes or until set

            Basic Pastry Recipe

            3 cups all-purpose flour
            1 teaspoons salt
            1/2 cup vegetable shortening
            1/4 pound cold unsalted butter, diced
            1/2 to 2/3 cup ice water
            Use food processor to make this pastry
            Add flour, salt, shortening and butter to processor and process 10 times
            slowly add ice water til forms soft batter dont use more water than needed.
            take out put on floured board and fold together good, place in saran wrap and put in refrigerator for 30 minutes or until ready to use.
            Can add 1 tbsp of sugar for using with sweet pies



            Nancy's Sweet Potato Casserole
            1/2 cup light brown sugar, packed
            2 Tbsps butter
            1 cup quick oats
            1 cup chopped pecans
            1 cup FLAKED coconut
            1 cup brown sugar, packed
            1 stick butter, melted

            Instructions:
            Mash the sweet potatoes and blend with the sugar and butter. Set aside.
            Blend remaining ingredients including the melted butter to make a crumble.
            Begin by spooning 2 cups of the potatoes into a large glass casserole dish. Spread the potatoes and smooth top, then add 1/3 of the crumble over the top. Add 2 to 3 more cups of potatoes and repeat with the crumble. Repeat process ending with the crumble on top.
            Bake at 325 degrees until potatoes are hot abt 30 min. (You can prepare this dish and refrigerate the day before, baking at a little higher temp and a few min. longer.)

            Peach Crisp


            Ingredients
            Casserole dish
            2 large cans of quartered peaches drained
            1 orange, grated rind
            1 1/4 cups granulated sugar
            1 cup brown sugar
            1 1/2 cups flour
            1/2 pint raspberries frozen or if canned drained
            1/4 teaspoon salt
            1 cup quick 1 minute oatmeal
            2 sticks of butter NOT margarine, cut up and kept cold

            Directions:
            Preheat the oven to 350 degrees
            Spray pam on baking dish or coat with butter
            Drain peaches
            Add grated orange rind,1/4 cup of the granulated sugar and 1/2 cup of the brown sugar., and 2 tbsp flour
            Mix well
            drain raspberries if in can
            fold into mixture
            should be hardly any liquid if any add more flour
            Pour into casserole dish and set aside
            Topping
            Add oats, flour, the rest of boths sugars, salt, and cold butter in large bowl and mix well with mixer until butter is pea size, or use food processor for 10 on and off cycles.
            Mixture will be thick
            Sprinkle evenly over peaches in casserole.
            bake for 1 hour until top is brown.
            Serve hot
            with Vanilla Ice Cream (optional)



            Fried Chicken


            1 whole cut up chicken
            cut the half chicken breasts into two pieces, making 4 breast pieces
            skinless or with skin on
            This recipe is also good for any chicken: boneless breasts or legs and thigh's

            (using boneless breasts, beat with mallet til thin

            2 cups plain flour
            1/2 tsp baking powder
            1 1/2 tsp salt
            1 tsp dried tyme
            1/2 tsp paprika
            2 eggs beaten
            2/3 cup milk or buttermilk
            2 tbsp lemon juice (optional)
            Oil

            Directions:
            combine,flour, salt, baking powder, tyme and paprika and set aside
            combine eggs, milk, lemon juice in a bowl
            In plastic or brown paper bag place dry ingredients
            put two pieces of chicken at a time in bag and shake, take out and place in liquid mixture and then back in flour mixture again, set out on paper towel, continue to do this til all chicken is coated.
            in deep skillet (you may use two skillets) place enough oil to fry chicken
            Heat oil and place chicken in hot oil
            place 4 or 5 pieces in pan at a time or use two skillets
            Fry Chicken about 10 minutes until you see the bottom side is browning, then turn over and fry other side. You can turn again if needed

            Place on paper towels to drain.
            You can make gravy on the drippings if desired
            Oil from drippings
            1 cup flour
            2 cups milk
            1 tsp salt
            2 tsp pepper
            1 packet of chicken gravy mix( optional)
            (dissolve gravy mix in milk)
            Using one of the skillets make sure 1/4 cup of oil is left
            put 1 cup of flour in hot oil and brown until it is a golden color
            add 2 cups of milk, 1 tsp salt, 2 tsp pepper and continue to cook til thickens, can always add milk or water to thin if it gets too thick
            you can also add a packet of chicken gravy mix to the cold milk and dissolve before adding to skillet. Makes a good chicken gravy.



            Taco Salad


            1/2 lb of ground beef
            1 packet taco seasoning
            1 cup water
            1/2 tsp salt
            1/2 tsp pepper
            bag of plain nacho's
            2 cups cheddar cheese grated
            1 small onion diced small
            2 tomatoes diced small
            can of red kidney beans drained and washed
            1/4 cup sliced black olives (optional) 1/4 cup sour cream
            1/2 cup picante sauce mild flavor or salsa
            1/2 head of lettuce shredded
            Place hamburger in skillet with water and heat, using potato masher to mash up hamburger into very small pieces as it cooks in the water. when cooked well add salt, pepper, 1/2 packet of taco seasoning
            cook about 5 minutes on low and set aside and let cool at room temp.
            In a large bowl, toss shredded lettuce,1/2 of the tomatoes, onion, beans, 1/2 of cheese, 1/2 cup picante sauce or salsa ,and olives if used,
            On large plates or serving bowls
            On each plate dividing per person
            place layer of nacho's
            lettuce mixture
            2 tbsp Picante sauce
            hamburger mixture,
            cheese
            sprinkle of tomatoes on top

            If you like a hot taco salad, Chop a hot pepper and place in the lettuce mixture or use hot picante sauce.



            Corn Casserole


            1 can of corn drained
            1 can of cream corn
            4 eggs divided and set yolks and whites aside
            2/3 cup shredded cheddar cheese
            1/2 cup cracker crumbs
            1 tbsp butter
            1/2 tsp salt
            1/2 tsp pepper
            1/4 tsp cream of tartar

            Directions:
            Combine egg yolks, milk, cheese, cracker crumbs, butter, salt, pepper,cream of tartar, stir well and add both corn's and mix well.

            Beat egg whites til stiff and fold into corn mixture
            Butter casserole dish or spray with pam
            place mixture in dish and bake at 350 for 40 minutes or until set and done
