- Louise Durgin is the source for a recipe of potatoes which we always referenced as potatoes a la Louise .. after Aunt Louise.
- Start with good baking potatoes, cleaned
- Slice lengthwise with skins on
- Place on a baking sheet - greased
- Salt & pepper and brush with butter or low-sat oil or olive oil -- (she used butter)
- Place in hot oven - about 400 for 30 minutes or so.
- As desired, serve when done - slightly browned or finish further by broiling for a few minutes until the tops 'puff'.
- Until I sort out the few Louise Durgins in Portland, Maine .. simply Aunt Louise will do. Our version of her recipe came from Sarah E. Scott-Durgin Connolly - Nana.
